I'm still a bit unsure what you are trying to do. 

If you want to start Ethereal at a specific point in time, or on a regular basis (start a new program instance every two hours), you should use system specific mechanism like cron or such. That should not be part of Ethereal.

If you want to start a new capture file every two hours, use the "Use multiple files" feature when setting the capture options. Have a look at the tooltips in that dialog to get more info, or have a look at the online help available there.
