In case reports from other universities that allow sniffing classes
help, here is my try.

We have an isolated lab for doing this. Students get an assignment
where they have to sniff packets and do a couple of things involving
hubs, switches and routers. We are using Ethereal with both W2K and
Linux. The courses are mandatory for many students so quite a big
percentage of our department's (Department of IT) students have to
take the lab.
