I'm working on the NFS implementation for ReliantUNIX (UNIX from SIEMENS)
for a living and have always to deal with tcpdump files of NFS traffic.
I extended the ReliantUNIX tcpdump with a full NFS decoder but I needed
something more user-friendly. Around ethereal-0.6.? I made a private version
of Ethereal with RPC and NFSv2 capabilities, which was enough at that time.

Later I discovered it would be better to let other people participate and 
made my changes (which included soon many other RPC services) in the main
development tree (around 0.7.?).
