It's already there (and has been for ages).

I don't know whether there's a default color scheme that everybody'd
like.  I personally prefer defaulting to Boring Old Black And White, and
setting color filters myself on occasion.

That might also be useful.

There has been talk of equipping Ethereal with a scripting language;
many "experts" might be written in scripting languages - I could imagine
people who aren't C programmers but who are familiar with networking
problems wanting to write scripts to detect particular problems.
