I just built 0.8.2 on Solaris 2.5.1, and was able to select
"Start" from the "Capture" menu after clicking "Stop" on an "Update list
of packets in real time" capture.
What happens when you try to select "Start..." from the capture menu?
Or does the capture menu not even show up?
What version of GTK+ are you using? ("ethereal -v" should report the
version numbers of all the libraries with which Ethereal was linked if
they make a version number available.)

The update was to let you close the window with the "Stop" button to
stop the capture (e.g., by clicking on the "X" button in the title bar,
if your window manager has a "Close window" function that's activated by
a button with an "X" in it, as many do), so it shouldn't affect whether
stopping a capture by clicking "Stop" in the capture window works.
