Ends up that was a filtering issue. When you choose to "Follow TCP Stream"
it generates a temp filter that does that. I assumed "Reload" meant reload
file/original buffer - I didn't realise it reloaded it and then put the same
temp filter over it again. I've now seen the Reset button at the bottom
which allows you to disable the filter - i.e. show original data :-)
